1 12 lasagna noodles
1 pound ground beef or turkey
1 can black beans, drained and rinsed
1 can corn, drained
1 can diced tomatoes with green chilies, drained
1 package taco seasoning mix
1 jar salsa
1 cup water
1 container of ricotta cheese (15 ounces)
1/2 cup grated cheddar cheese
2 cups shredded Mexican blend cheese
Salt and pepper to taste
Fresh cilantro for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. Cook the lasagna noodles according to the package instructions in a large pot of salted boiling water. Once cooked, drain the noodles and rinse them with cold water to stop the cooking process. Set the noodles aside.

  10. Cover the baking dish with foil and bake for 25 minutes.

  11. Remove the foil and bake for an additional 25 minutes, or until the cheese is melted and bubbly and the lasagna is heated through.
